I made zucchini bread last night. Why? I don't know - I've never had it. For some reason, it sounded really good. I found a recipe that looked good and started baking. (I admit, I'm not much of a baker - probably because I like to improvise my recipes and that can effect the end result a lot more in baking.)

I made it without sugar (used Splenda and applesauce), soaked the raisins in dark rum overnight until they were like puffy marshmallows. Walnuts, lots of cinnamon. Oh, and some zucchini too.

Damn, it is goooooooooooooooooooooooo ood. Gotta chop it up into invidual pieces and freeze it before I'm too tempted to eat it all.

I'm feeling MUCH better depression-wise. Unbelievable how stopping the antidepressant has made such a difference. Still feel like mush physically, but this is progress.

You would think zucchini bread would be terrible. I love it, too and haven't had it forever. I had a garden once and that was the only thing that grew, and that was the only thing I liked that you could make with it. It was good stuff, though.

It's pretty much the same as banana bread except with more fiber. You can't taste it. (Esp b/c of the rum-soaked raisins - hehe)

It is so good that I put the rest of it in the freezer so I wouldn't be tempted to finish the rest of the 2 loaves off... YUM.

glad u r feeling better .... it's a break through .... things should be up hill from here. you may have days that you back slide, but just believe that there is a rainbow behind that dark cloud, all will be well. (((hugs)))

we were force fed zucchini bread throughout our childhood, that and applesaucecake, and aweful waffles and damn i miss it!
